It is important to know that eggs can be temperamental when making omelets. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If you don't keep them cold enough, the whites won't form properly, and the yolks will break down too much and become runny. This will make your omelets appear strangely colored. If you plan to cook the eggs right away, it is best to use room temperature eggs.

You can also separate the egg before you add it to the pan. You don't want the white to get mixed with the yolk, as this could cause the egg to curdle.

You could end up burning the bottom half of the egg if the egg is added directly to the heat source. Instead, heat the egg in a microwave for 10 seconds and then place it in a pan. The heat from the microwave cooks the egg just enough without overcooking it.
